We are using Apple TVs to mirror the iPad screens. While it took the teachers a while to master this technique, the students have had no problems what so ever. It pretty much seems to come naturally to them and they love to show their work this way.
Since everyone can mirror and easily "knock" someone else off the the Apple TV, the teachers have put some very good procedures in place. Since the students really enjoy the privilege of being able to mirror, they are very cooperative about following the rules.
